1st attempt at sausage sticks

I am calling this a success!!  3 lbs of meat, stuffed it in the new grinder, mixed, switched plates to the sausage stuffing plate, and that was it. The mix was store bought kind of crappy but got the job done and got me going enough. Dont think I will use again but was good for first run. Good eating everyone!!!

Fairly good flavor. Did not smoke as I dont own a smoker yet. Last one I had got blown into the water during a mini hurricane/tornado/microburst thing.  Smoked a ton of salmon in that thing.   I looked at a few but have not pulled the trigger yet on one.  Any recommendations??

 

I also didnt add any pork/beef fat to this. I didnt have any on hand and figured I would try without. Worked out just fine.  I did find a local source though that sells pork fat and real sausage casings for next time.

 

The mix was from Bass Pro, where I got the grinder.  Anyone thinking about doing this, its not that difficult.  Processing deer where I go is about 75.00.  We had 3 deer and I figured Id spend cash on a grinder and DIY butcher job instead of the butcher. I took my wifes deer there last year and got almost nothing back. This year I have lots of meat, and options to make my own sausage.  Good stuff!!!

All I can say is stay away from propane smokers. I bought one and hate the thing. Temp doesn't get low enough and just find it to be a piece of junk.

 all you have to do is add an inline valve and you can drop below 200 easily and adjust where you need it. Simple.  I wouldn't trade my propane smoker. it can get hotter and I can take it anywhere I want with no electric required.

I have a propane smoker and I added a regulator to the line from the tank to the smoker and can control the temp fine. I had to do this because i couldn't get the temp low enough. now it works great.
