here is my go to loin recipe...... - cut the loin into medallions -pound them out to about 1 1/2 inch thick or so -season with salt and pepper -light dredge in seasoned flour -pan fry in olive oil and butter until they have a nice sear on each side, but still not cooked -remove from pan and wipe out any leftover grease. -saute a shallot and garlic in some butter -add a decent red wine to the pan and let reduce a little -then add some brown gravy (homemade is the best) but a good pre-made store one will do -Return the venison to the pan and let cook together in the sauce for 5-10 minutes -add some butter and season to taste

I don't know if you touched on it or not. But what do you use for freshwater? Also, how do you take care of your hygiene during the week? Do you wash up at all? Boil water? sorry of these are redundant questions but I'm very interested in the trip

I'm assuming you have been going there long enough that you know the land/terrain pretty good. your not winging it are you? How do you pack the wood stove and all the other goods? Food? Clothing? Utensils? Canoe? etc? even though you pack light I'm sure there is a decent amount of essentials that need to come.

I can't remember how I found out about the course I took. Maybe if you call some local fish and game club's they can help you out. Usually they're the ones who host the courses.

Where area are you coming from? Not sure what southern tier means to you. But i took my trapping course in walkill which is in ulster county.
