CuseHunter
Today the temp is around 40-50. How long you figure it's okay to hang a deer?
Paula
I thought this was going to be something totally different
cdmckane
I don't hang mine at all. They're at the processor the night I shoot them. If I were to cut them myself, I'd get it skinned and in the shade asap then cut it either tonight or first thing in the morning. First-light
If you can't control it from freezing at night and getting above 40 degrees during the day I would go no longer than 2 days.
CuseHunter
I got two bags of ice in the chest too
Danny
I would butcher it by this evening, you cannot cure meat in an uncontrolled temp environment but anything above 42 degrees bacteria begins
letinmfly
Once the temp goes above 45 the deer comes down and gets butchered. Not taking a chance on letting it spoil.
Renegade Hunter
Couple days.
letinmfly
Here's an article on hanging deer. http://www.ehow.com/about_4598481_long-hang-deer-before-processing_.html
mmkay
I find it harder to cape the longer it hangs. I usually cape and quarter them right after I shoot them. if its a large deer I'll do it in the woods, build a small and cook some of the backstraps in tin foil w/ onion and potatoes for lunch. ididnotvoteforobama
I hunted in west texas on my brother in laws lease, they would let it hang 2-3 days and its 70 during the day and 35-40 at night . Not me, its in the freezer within 24 hrs regardless of how warm or cold it is .
gastrodoc
If the temp is higher than 35-40 degrees I would not hang it for more than a few hours. The temperatures are high enough that they are not suppressing baterial growth and you take a definite chance of spoilage
Danny
i usually wait to skin it right before butchering, if i skin it the air dries all the meat on the outside and you then have even more trimming to do

blackradio
I shot one Sunday night. Let it hang overnight and all day yesterday (44 degrees) but the sun never touched it. I had ice in the cavity and quartered it last night when I got home from work and into the cooler it went. Now I'll butcher a leg or 2 each day. landtracdeerhunter
If the hide starts skinning itself, you know the meat's cured, LOL.

njg0621
You shouldn't hang them at all unless you have a controlled environment (walk in fridge) IMO. If the temp fluctuates above and below freezing it is not good on the meat.
CuseHunter
I just asked because my buddy got a buck this morning. I had lots of school work so I stayed in, he got a small buck at 7:45 in the ground blind we built on a small piece of state land near syracuse. We are cutting it up in the morning when we have a couple hours.
