I have not been able to figure out how to make grilled octopus right in ver a decade. Had it multiple times in Greece and fell in love with it. Never had it anywhere near as good.

The process I follow comes from Randazzos Fish Market on Arthur Ave and is flawless every time.

Good size pot to a rolling boil.
Dunk and remove once;
Dunk and remove again; and then dunk and remove a third time. Then return the pot to a boils and allow octopus to boil for 25 minutes. Turn off the heat and let it sit in the water for 1 hour.
I then cut into 5 sections-head, 2 legs(x4) and then drizzle with olive oil, salt, pepper, crushed red pepper and let marinade until I grill it(high heat for a few minutes per side).
Squirt of lemon to finish and right over a salad.

Hell it was even tender cold the next day over a lunch salad.
