Interesting- I always cook straps (usually on grill or caste iron pan and finished in the oven) whole and slice after cooking so not to over cook them

I like it that way too! But was pressed for time. They were medium. I prefer closer to medium rare but then my wife wouldn't eat...

Yes and holy smokes were they good.  Bun and no condiments because they were so flavorful.  I  not a big fan of paying others to process my deer but those were worth whatever Larry paid.  Lol
