Ground venison ground from Quaker Creek, Has angus beef mixed in.  I added minced garlic, sea salt, black pepper, Italian seasonings, and onion powder.  Cast iron pan cooked, and deep fried french fries. Burgers topped with avocado, swiss, bbq sauce, abd thin sliced red onion, bacon , on lightly toasted English muffins

Great minds... I had venison burgers Tonite too, stacked onion rings on mine. Looks great

Too tasty to worry about presentation tonight...venison Osso Buco....9 pounds of boneless shanks cooked for 3 hours in venison stock, red wine and veg.
House smells like happiness.

So I found a frozen duck that I had left over from a box of samples I had from work. Decided to pull the breast off which will be tomorrow’s dinner, the legs and some of the fat will be made into confit and ultimately cassoulet.

The rest is being roasted for duck stock. Not really sure what I’m going to do with it but I’m making duck stock

Hell yes! Chef, your dinner post are pretty damn cool. I definitely have tried to copy some stuff you have done. 

Just an idea but I sous vide some fingerling potatoes in duck confit and it worked out pretty well.

I will sous vide then in the duck fat and then fry them in duck fat after
