Here goes nothing...the F&S venison brats with some grill onions and peppers. Sabrett hot dog just in case. First garden tomato and mozzarella.

Brats were better than my first attempt but STILL too dry but absolutely edible(just not servable to guests). One of the other large drawback is the casing. They are NASTY-tough, rubbery, thick inedible. What do others use besides these:

did you ever try tartar with fresh venison? it's been something I've wanted to try for a long time but haven't.

Yes, almost every bow killed deer I take I make it with the heart. It’s great use backstraps as well they work great

Remove from deer, clean the heart... dice very fine mix with normal tartar seasoning... mayo mustard shallot salt pepper herbs

I used to do this for a living... still in the business but don’t cook any more... disclaimer I’m not cooking any of this I’m on a cruise.
