Today I tried a Louisiana crispy brand and it had cornmeal in it. Which was a good crunch but thought it overtook the flavor of the fish a little too much. Would've been great on catfish though.

Usually I use just a pancake  mix and some Tony chacheres Creole seasoning.  Or house of Autry seafood breading and Creole seasoning. 

I dont use an egg wash cause I like a lighter breading.

Lol.  I probably eat ketchup twice a year, so they all taste the same to me.  But mayo I agree on. I like the hellmans olive oil mayo.    And I am willing to risk cheap ketchup......but ketchup only!    I had to check expiration on it I've had it so long.

Outstanding meal at Carte Blanche in Hamburg NY. Amuse buche Honey dew melon goat cheese drizzled with honey siracha/ popovers
Calamari with diablo Parmesan cream sauce/ roasted bone marrow , rich brown sauce and rye sauce / cioppino / flight of experimental ice creams which were moldy brownie ( chocolate and Gorgonzola cheese ) / tahini black garlic bacon / smoked sage key lime cheesecake
