That is the smoke chamber of my masonry heater i built in my house last year. Its main job is heating, but you can cook in it when the fire has died down. My father, brother and nephew are visiting from Germany and we had a pizza party. We made almost ten different ones. Temperature in the heater was probably around 800F. I have an infrared thermometer, but those only read surface temps, and the bricks were at 500 F.

Do you brine in a metal pot? I was always told ceramic or glass. Not criticizing, just wondering.

I'm intrigued! Never heard of that.

I take ground venison meatloaf mix and roll into balls, cut an onion in half and peel off the matching halves to put around the meat.  Then wrap in bacon and toothpick and put in the smoker.  Glaze them for the last 1/2 hour with BBQ sauce , but this time gonna use mighty taco for a kick.

I know. Wife made it an hour earlier, so I needed to heat it up. Should have taken pic after cheese melted and taco sauce added
