Taught my son to make sausage last night. Used a 50 50 venison to pork mix. Made a sweet Italian and a spicy pepper and cheese.

If you are looking to adopt another son, I may be available (somewhat housetrained and decent at doing $hit!)....Lets try this out...wow Dad that sausage looks awesome. Can you show me again!

Preheat oven to 400

Dice up a onion, saute onions and mushrooms.

Mix onions, mushrooms with cream cheese.

Slice the meat half way through

Apply all purpose rub to the meat.

Put in filling,  then wrap in bacon. Secure it with tooth picks.

Baked til I had a internal temp of 145. Comes out about medium. Took about 1 hour.

Ha I can barely afford to feed the one I have. I'll tell you what I tell him, it's time to get a job.

50:50 pork to venison mix

In the one I added salt, parsley, parmesan cheese, fennel seed, and garlic powder. Then dumped half a bottle of Merlot on it. 

In the other it was paprika, salt, black pepper, chopped jarred jalapenos, cubed cheddar, fennel seed, minced garlic.

Nothing was measured. Just kinda winged it. Wife said it's the best batch yet.

You gave us old crappy jerky!!! Shoe leather tastes better. @turkeyfeathers @Jeremy K @The_Real_TCIII and @sodfather can confirm this.

Did you quit hunting by the way? You are like Storm with zero updates.

Had you brought us fresh jerky we could give a better assessment but that jerky was cured in the early 2000s. We came 375 miles to try it too!
