It is truly awesome. I started doing it by accident. I was looking for a way to keep some stuff hot one thanksgiving and turned on my electric smoker. Forgot there were chips in the hopper and bam

It was easy I've made it before. I always dice up some onions and cook in butter.  Then I added a box of cooked pasta, a container of cottage cheese, and then shredded Colby and Monterey jack. Mixed in some creole seasoning.  Then put in a cup of milk. I like little smokies in it too. Gives it even more flavor.  

Can make a cheese sauce like a usual Mac and cheese too it works the same.  

I smoked it in hickory for an hour and 20 min at 220.  

I plan on trying a buffalo chicken one sometime too.

Little Organic Free Range Wild Turkey Schnitzel over a bed of freshly tied Bowties with a lovely FIFTH HAMMER "FOR THE LOVE OF PURPLE". Note the extra head was intentional to release aroma. And that was only part way through my pour.20200531_200459.jpg

Any sauce on those bad boys? Also how'd you make them? Pizza oven?

The white gets a shmear of a killer garlic paste under the mozzarella then the dollops of fresh ricotta with grated parm. Hit with some crushed red pepper flakes after slicing and call it a day
