Venison chilli recipes

My first go at a chili, here's how it went down:

3 lb ground venison 

2 cans Bush's dark red kidney beans

1 28 oz can petite diced tomatos

1 28 oz can crushed tomatos

1 red and 1 yellow pepper

1 large sweet onion

1 tbsp minced garlic

2 packets of McCormick Chili seasoning

2 tbsp black pepper

2 tbsp parsley

1 tbsp cayene pepper

1 tbsp salt

extra virgin olive oil

Lea & Perrins Worcestershire sauce

Habanero hot sauce (optional)

Cheddar cheese

First, finely dice the peppers and onions into a bowl and set aside.  Add olive oil to a large skillet and brown the venison over low heat.  Add worcestershire sauce and 1 McCormick pak while browning.  When done, pour browned meat into a strainer and set aside.

Add diced veggies to the skillet with minced garlic and add olive oil.  Saute over low heat, stirring often.  While doing that, add diced tomatos, crushed tomatos, beans, 1 McCormick pak, salt & pepper, cayene pepper, parsley and some hot sauce to the crock pot.  Make it as hot or mild as desired; I used about a 1/2 tbsp of the habanero.

Add meat once drained.  Add veggies from skillet and stir everything together.  Cook on high heat one hour then an additional 4 hours on low heat.  Stir and sample at least hourly and add additional spices as desired.  Top off with shaved cheddar cheese and slice of hearty bread.

2lbs venison hamburger 1 can rotel mild, 1 large onion chopped,2 green bell peppers and 3 stalks celery chopped. 2 cans crushed tomatoes 3 cans kidney beans and 1 can black beans. 1 1/2 packs chili seasoning.

Cook burger and add all rest to crock pot after a few hours add in 1 can tomato paste to thicken. great chili perfect every time. My wife's favorite!
