Beef jerky….great spicy and sweet! Apple and cherry wood smoked for hour 2 & 3. Threw some cocoa powder in the marinade for “complexity” but I’m not that complex!!!

Cheaply CharBroil electric analog…so far it’s simple to use And keeps a low enough heat (170) and cranks good smoke at 190 or so

Nice... We're gearing up for sausagefest 2022.  Should happen in the next month and we'll probably do 50lbs.
