Another cool butchering job.
Take a look at how clean his hide is and how much of the “flap meat” he saves since it’s not ripped off with when the hide was removed - not sure how to cook that as Its loaded with connective tissue-maybe a bracioli?

Yea the peppers them selves are very different in spice level that it’s hard to follow a recipe..

I would recommend mixing a Serrano in there if you want extra heat.

I don’t know why but I have in my head that I want to do a Korean BBQ flavored sausage

Thanks, I’m thinking about essential making a kalbi marinade and then grinding the meat and stuffing it.

I may put some Korean pepper flakes in there too. Could be fun
