  1. I have never thought about usnig a spicey mixture to make pickled eggs out of. Pickled eggs are one of my favorite things to make and eat, and I also love hot stuff, so I don't know why it didn't click to try something like this. I don't know of any recipes that are different or really out there. I find that a simple mixture of beats and vinegar is sufficient to make some amazing eggs. i do prefer to add a nice degree of salt to the mix. I also find that placing the eggs in the mix while hot makes a huge difference also. It seems to suck more of the juice of for some reason.
  2. I would agree with the other two. I have had bear jerky in the past that friends have made, but overall most people avoid even trying it because of the problems that can come from making bear jerky. It wasn't the best jerky i ever had. I would honestly say that I prefer deer jerky just because of flavor alone. Bear is such a greasy and fatty meat that it can be challenging to work with it well enough to make jerky. Of course there is the fact as already discussed of possibly not being able to kill harmful bacteria and such.
  3. I can't handle to much fat or gristle either in my meat. I try to trim as much of the fat off as possible. I am not a huge "steak" fan, even though I do understand that some steaks taste better because of the fat. I also cut that piece off on the hind legs. I don't know what it is called myself either, but regardless I get rid of it. I know many people who leave it and eat it without any complaints. Some people just throw it into the mix of meat that they send off to make burger out of. I agree with crappy, I enjoy the video Jennifer.
  4. No matter what one plans to can, the actual process itself isn't very difficult. The threads listed above will be more than enough to help you learn what you need to know in order to can venison. The worst part of the whole process is in finding enough cans and taking the time to do it all. I would imagine that it would last as long as anything else that is canned. Most canned foods can last for years before they will need to be thrown away. This was the reason why it was such a popular activity 50 years ago. There was a time that we had to rely on processes such as drying and canning food in order to preserve it for as long as possible. Now we have the advantages that technology has to offer.
