  1. do you know to an internal temp, an amount of time or to a texture?

    I bring them up to temp slowly and don't put the smoke to them until the casings are dry. I run the smokehouse around 180 to 200 degrees and I wait until the casings start to crinkle up and pull in. I have been making smoked Polish sausage in the 300 to 400 # amount for Easter for about 20 years so these smoke sticks are just tasty little treats for my family and friends........ I think the most critical stage of smoking meat is letting the moisture evaporate from the casings or manually wipe them dry as they are smoking. If you add smoke when they are still wet they will get a bitter taste to them.........Just my 2 cents...........

    I buy the mix called Devils Kiss and it has Ghost pepper added in it. Definitely a fantastic beef stick if you like heat. Hold mouse over pics to describe them...Can't wait to get more venison because this beef route is expensive..

  3. I have the Cabelas #22 grinder along with their meat mixer that attaches and holds 44 LBS of meat. I make a LOT of sausage and this grinder and mixer attachment are the cats meow. Grinds the meat as fast as you can feed it.

  4. I don't even want anyone from the government LOOKING at my property let alone giving me assistance because you know where that leads. They have too much power already.........  If I can't afford to do something I don't do it...  Gives a great piece of mind.

  5. I just had a very pleasurable experience acquiring a self defense Pistol Permit from PA. I have had an unrestricted NY  license for 38 years and decided to try for a PA license because of the reciprocy for the many states it entails. I went online, d/loaded the application kit and filled it out along with 2 character references. They said it had to be delivered in person so onward I trudged to Mckean County and handed the sheriff my permit application. I handed her my NYS permit and drivers license along with my application. She said to take a seat outside the office. After about 10 minutes she said to come in and she needed 20 dollars. I gave her a check and she said she doesn't take NYS checks with a sneer so I paid cash. She said to stand in the square on the floor and the next thing I know I was being photographed. The permit was printed out on a laminated card like NYS'  and states Self Defense. She said thanks and it is good for 5 years. I was pleasantly surprised they didn't call the references or anything and I was issued a carry permit on the spot in less than 1/2 hr.  Definitely a problem in this Cuomo state. Just thought I would give a heads up......

  6. A class act, and a true Buffalonian. The last of the founding fathers of the NFL. He cared more about his city, his team, and the game in general than he did about his bank account or what others thought of him.

    I was fortunate enough to get to know Seymour Knox before he passed away and left the Sabres rudderless. I asked him why he would just give away the last few thousand unsold tickets for a home game. (He would go to the local malls or drive around in various neighborhoods passing out tickets hours before a game) He said, "...the saddest thing in sports is any empty seat..." I think Mr. Wilson was of that same mentality. His passing is the end of that generation, and of an ethos in professional sports that we won't ever see again.

    Nicely stated. That generation of passion and love of the sport and people is a thing of the past. Now it is $$$$$$$$$$$$$   and f the fans.

  7. You can tell when a New guy buys some property. The posted signs are 10 feet apart..   Kind of trashes up the wilderness. Common sense is the best way to post your property.

  8. I have had a carry permit since 1975. I carried everything you can think of during the almost 40 years of having my permit. You may laugh but I now carry just about everywhere my Ruger LCR 22 mag with crimson trace sights. Very concealable, nice and light, and can see in the dark.   Makes my day..... I can crank out 6 rounds in probably a second and a half so its credible...

  9. Two weeks ago I added .22LR to my wife's shopping list.  I was shocked when she came back from walmart (Middletown) with 3 boxes.  

    That is a great sign. Maybe they are producing more or there are less hoarders.  Good to see them trickling back on the shelves.
