Early Posted August 18, 2012 Share Posted August 18, 2012 If you, like I, are a fan of beef chuck steak or roast...here's something for you to try: CAST IRON CHUCK Ingredients: Boneless chuck steak (1") or roast (2") One large white or sweet onion Butter, salt & pepper Preheat oven to 500 (Yep...500) Peel the onion and slice in half, top-to-bottom; slice in thin half rings across the grain. Put the onion slices in a microwave safe bowl with a tablespoon of butter. Lightly butter a cast iron fry pan big enough to hold your chuck. Heat it over high heat until it just reaches the smoking point. Brown the chuck well on both sides. Then put the fry pan & chuck into the the HOT oven. For 1" steak, leave it in the oven for five (5) minutes; for a 2" roast, leave it in for 8 minutes. Then remove from the oven an let rest for 5 minutes. While the meat is in the oven, cook the onions until almost done in the microwave. While the meat rests, finish the onions off in the juices in the cast iron fry pan...brown them well. To serve, slice the chuck into 3/8" slices...place on a platter...smother with the onions. ENJOY!!! Note: The meat should come out medium rare (red center); adjust to your liking in the microwave, if too rare. I like mine quite rare, and serve it with home fries and baked beans.
