Clover or annual of choice?

I have had great luck growing clover on a new property but not so much with annuals. My thought was by creating a summer and fall plot I would provide more nutrition to the wildlife. 

Question is what are your thoughts and what would you personally go with assuming time and effort doesn't play into your choice.
