Early Posted October 13, 2012 Share Posted October 13, 2012 I have been catching/eating smallmouth bass for well over fifty years. Most of them I have deep fried, my favorite; Some, I baked...others I grilled over charcoal. Last night I tried something new...new for me, at least. I melted some butter in a fry pan...added a few drops of lemon juice...and let it get quite hot. Then I slipped in two nice smallmouth fillets and seared them quickly on both sides (took on a nice golden brown color). Then, I turned the heat down and cooked until the fish was done. Came out absolutely delicious. Simple and delicious...and with the fan running as I cooked...no smell! I will definitely do this again! Fall smallie fishing is really heating up here in the Chemung River drainage..I went walleye fishing this morning..No 'eyes" (lost a nice one) but couldn't keep the smallmouths off the hook, which is not a BAD thing..lol..
