Leek Cheese Spread

Leek Cheese Spread Two cups of leek whites (ground), one pound shredded cheddar (sharp) ,one pound of cheese whiz, two pounds of cream cheese, mix all together..  ( freezes  well )

I may try to revamp that. Although I'm sure it's great, I cannot stand cheez-whiz. Nor can I deal with alot of cream cheese.

 

Off the top of my head It may go something like this.

2C roughly minced leek

3C white sharp cheddar

1C mascarpone cheese

6 oz. queso fresco cheese 

1 sm. jar of pimentos(4 oz.)

1/2 of a chipotle pepper "aka smoked jalapeno"; finely chopped or 3/4 tsp. ground

 

Blend all ingregdients. A dallop in a warm bowl of new england clam chowder or tomato soup don't seem like a bad idea! Can ya'll tell that I skipped lunch? lol

  -side note- Laughing Cow brand has chipotle flavored queso fresco in 6 oz. packages if you'd rather not buy/make chipotle peppers.

that is why it is good to freeze some and enjoy leeks the year around

Honestly, I didn't bring a single leek home last year. I did snack on a few while out trout fishing.
