Cabin Fever
Located several areas with leeks recently. The bulbs are really small, but the tops are ~10". Is it better to wait until the bulbs are bigger, before harvesting? Can you just freeze to preserve? How do they hold up? I would like to hang onto a few for when I make soup in the winter. Also, I've never tried those chives before. Do they have the same flavor as scallion or small onion?
noahmstone
I have been watching the island I get my leaks from and some look 6"-8" tall but I'm not even to waste my time crossing the high watered river for another couple of weeks. Right now there are small patches of leaks in a couple weeks the entire island will be covered in them. You can eat them raw, grilled, sautéed petty much anyway you want to use them. I love them sautéed with burgers or venison. And yes you can freeze them I still have a little bit left from last year. I just clean them up really good and put them in quart freezer bags. Some people also pickle them and say they are out of this world that way but I am not real big on things that are pickled.<br />Also chives are good they aren't as strong but we used to eat them all the time as kids they grew everywhere and we would pick them and eat them as we played. noahmstone
I have never tried the leaves, I always just cut them off while cleaning the bulbs. I will have to try some this year. There are acres of leaks around my parents house we get some bulbs that are that are decent sized. After a couple of hours of digging them up they add up:). My wife hates when I bring leaks home. I am no longer allowed to bring them in the house until they are cleaned and ready for the freezer. Cabin Fever
I sauteed some leeks in oil and then added some canned venison. The flavor the leeks added was AMAZING!!! I will definately be stocking up on them and trying with different foods!
F-150
Mak's Meats in Cuba makes a leek sausage that out of this world on the grill, you could make your own mild italian seasoning , meat and some leeks mixed together , and stuffed in asausage casing.
