I only ask since we did that with a tenderloin this year(butchered and consumed within 3 hours of the harvest) and we actually found the tenderloin somewhat chewy, or at least more chewy than any tenderloin we have had frozen and defrosted. No hijacking of this thread intended but since you brought it up, you got me thinking. Again...Congrats! Slight change of plans, wife won't let me cancel the party were supposed to go to tonight.
