So today is the first time I'm using my new smoker.... prepped two racks of pork ribs and what was left of some venison ribs and chops yesterday. I made my own rub mix and let sit 24 hours.

Looking forward to tender ribs and chops this evening......

I bought a Chefmate at Field and Stream two weeks ago for $499. Sorry dinner has come and gone. The pork ribs fell off the bone but the venison ribs were a bit tough. Next time I need to wrap them in aluminum for the last 2 hours to keep them moist and tender. There's always next weekend.....
