Experiences grafting fruit trees?

I picked up 5 grafted pears from Ryan, (Blue Hill member here) He grafts all his trees. And these pears are 2 year old trees and they are gowing like crazy this year already. Says his will fruit by year 4. Showed me quick how to do the graft. without physically doing one lol. Id like to graft some crab apple and a peach tree i found that produced fruit for the very first time last year.. and it produced hundreds if not thousands of fruit for its first year.. and is probably only 10-15' tall
