My son just brought home a cpl Canadian geese. He breasted them out.

Planning to grill them tomorrow. First time. I saw online that you want to serve it medium rare. 

Any cooking tips / advice appreciated.

I tried eating  goose alot of different ways but my favorite  it to make it into jerky or sausage .
