Todd67 Posted November 12, 2020 Share Posted November 12, 2020 Cut roughly the size of beef tenderloins, soaked in apple cider, wrapped w/ bacon . Seared outside including bacon, finished to rare-midrare in 400 deg oven. Diced onions into pan, port wine reduction, and it was delicious! Also cleaned out the heart, sliced lengthwise, removed all connective tissue, seared in pan w/ olive oil & s/p. Served rare. First white tail heart - delicious!
