This is coming up in NY.   As a certified maple syrup junkie, I can tell you it is a decent time.  It was cancelled last year due to Covid

Most of these are small operation and more or less a hobby. The owners are very proud to talk about their operation.  Many use a membrane filter to extract some water from sap to reduce boil time requirements.  And to tour around the places these are located is worth the trip alone.

(And for a small fee I will show you where the breweries are also located that I surprise the wife we just happened on.  Wink Wink)
