Good video for field dressing a doe

I came across a rather good video for field dressing a doe. Other than then the knife drawing toward him the guy did an excellent job.

I don't get the whole use of a saw thing. no need to expose the meat on the hind quarter and split the pelvis like he did and a knife will cut right up the side of the sternum to open the chest.

My thought exactly, I've noticed a lot of guys splitting the pelvis why? All that's going to accomplish is the meat of the hind quarter getting dirty and dried out.
