Hickory Syrup

I just made some

shag bark hickory syrup. While squirell hunting in Pendelton I found some hickory trees. I brought some of the loose bark home washed and toasted it.Then after simmering a tea of bark and spring water i removed the bark then reduced it by 25% of its volume. Then just add sugar. We ended up with 15 quarts that we processed for our use throught the year. Just as good as maple with a little bit of smokey flavor.
