everything i have read and been taught says to hang by the legs and all the reason points to better drainage. I've attached a pdf i found a while ago that has some pretty basic processing tips in it. I'm not saying it's right or wrong or the only way. Just found it useful.

Always have hung by the head for drainage, processing always legs up.

What is draining? If it is anything left in the body cavity wouldn't that just come right out of the mouth and nose?
