Oh yes , we always dig some up for potato leek soup. Boy are they stinky to sit in. Didn't know they were valuable , just very edible.

Our property is just loaded with them..I dig and freeze a lot for winter. Very healthy for you

They sell them to restaurants for as high 15 a lb in the height of the season
