Personally, the best venison I have eaten is fat caribou taken in late August or early September BEFORE the rut....I have also heard that the very best wild venison is Sitka Blacktail, but I have never been lucky enough to sample it...It was on my bucket list, but time has caught up with me and I;ll never get to do it.... a guy that donated the black bear hunt in Alaska for our QDMA banquet gave me a couple packages of that.
