2012_taco Posted April 9, 2018 Share Posted April 9, 2018 I've been making the same venison jerky recipe for years. it's actually very good and I get rave reviews but I'm thinking of trying some other flavors. I don't like to use the store bought recipes as I find them way too salty. Does anyone else make ground venison jerky and what are your favorite recipes. Here's my recipe: 3 lbs ground venison 2 tsp. salt 1 tsp. cayenne pepper a few shakes of red pepper flakes (more or less depends how hot you like it) 1 tsp. black pepper 1 tsp. garlic powder 2 tsp. dry mustard A few shakes of mustard seed 3 tbsp. brown sugar 4 tsp. liquid smoke 2 tsp. cure (I use Mortons tender quick) mix all ingredients, let sit in fridge for 3-4 hours, I use a shooter and place on dehydrator for 4-5 hours at 160 degrees. 2 Quote Link to comment Share on other sites More sharing options...

With making jerky from whole meat and not ground I cut the cure back to almost none. It got rid of the over salty taste. No need for the cure imo as it’ll be gone in days and you’re not making pemicsn to last months as you take your horse or wagon train out west The batch I made with jerky shooter and ground became dog treats. It was terrible compared to the whole meat jerky I make.
