So I had two gardens going this year, one at camp. And planned to can the excess produce. Wound up picking and eating most of it instead. Well for next year the gardening plan will be a little different. Anyway I found this video on canning that I wanted to post. The guy doesn't use extra spices or cider vinegar but has a calm explanation about the process. Enjoy.

Just bought a pressure canner and some other supplies. i will be doing Venison this year I hope. I also have pickles and salsa on the list for this year. The wife has placed an order for apple sauce so I have a few things to keep me busy between the morning and evening hunt.

 

Hate to plug another site but there are some very good canning threads on this one.

I tried canning pickles for several years and they always came out slimy. I could never figure out why???

From what I have read and a family member that makes very good and crisp pickles, the brin can't be hot when you pour it in the jar over the cukes.

 

I am going to try this recipe when I get the order.
