Venison Sausage

Made my first batch ever yesterday and it came out awesome.  Did 30lbs, mostly Italian but some breakfast and my family loved both.  Don't have a press yet, so I stuck with patties.  The recipes came from:

If you don't already have a secret family recipe, I highly recommend these.  The only change I made was to use a 2 to 1 (rather than the recommended 1.5 to 1) mix of venison to pork butt to keep the fat content a bit lower.

If you have an electric grinder, you can use that to stuff sausage. It doesnt work as good as a press style stuffer, but it gets the job done.

 

I do have the attachments for my grinder to stuff (I think you or Culver suggested the grinder last year and it works great).  But, I also heard without a press, its slow and you get too much air in the casing.  Eventually I will spring for a press because I want to try making cured sausages, but no rush as I prefer patties anyways.  Thanks.  You probably have your own perfected recipe already but this was really good.
