moog5050 Posted October 12, 2015 Share Posted October 12, 2015 Made my first batch ever yesterday and it came out awesome. Did 30lbs, mostly Italian but some breakfast and my family loved both. Don't have a press yet, so I stuck with patties. The recipes came from: http://www.free-deer-hunting-tips.com/articles/best_tasting_venison_sausage.htm If you don't already have a secret family recipe, I highly recommend these. The only change I made was to use a 2 to 1 (rather than the recommended 1.5 to 1) mix of venison to pork butt to keep the fat content a bit lower. 1 Quote Link to comment Share on other sites More sharing options...

I do have the attachments for my grinder to stuff (I think you or Culver suggested the grinder last year and it works great). But, I also heard without a press, its slow and you get too much air in the casing. Eventually I will spring for a press because I want to try making cured sausages, but no rush as I prefer patties anyways. Thanks.
