However I forgot my recipe. Otto Posted November 21, 2017 Share Posted November 21, 2017 Hank Shaw has never let me down... https://honest-food.net/wild-game/venison-recipes/large-roasts/ I did a venison roast for our early thanksgiving last week - tie it up and then pierced the meat about 15 times with a small sharp knife, inserted sliced garlic and a few leaves of rosemary into each one, coated it lightly with olive oil, then ground pepper and sea salt, roasted in the oven at 350 until it reach 125 degrees, let it rest 15 minutes and it was FANTASTIC. I had planned to stuff some bacon fat into it as well but completely forgot. I actually am glad I did not do that. And by the way, I used a thermometer with an alarm on it to tell me exactly when it hit 125. I got it at Wegmans for under $20.
