Smoked venison

I'm gonna smoke a venison roast for thanksgiving again this year. I did it last year and it turned out better than prime rib. However I forgot my recipe. Anyone have one they'd be interested in sharing, I'd like it to turn out medium with red in the center thanks

I did a venison roast for our early thanksgiving last week - tie it up and then pierced the meat about 15 times with a small sharp knife, inserted sliced garlic and a few leaves of rosemary into each one, coated it lightly with olive oil, then ground pepper and sea salt, roasted in the oven at 350 until it reach 125 degrees, let it rest 15 minutes and it was FANTASTIC.

Ooh I may try this  I usually get my roasts made into cubed steaks but this year (hopefully) I won't

Yes, especially after sitting for 15 or so minutes.  Perfectly done.   I had planned to stuff some bacon fat into it as well but completely forgot.  I actually am glad I did not do that.

And by the way, I used a thermometer with an alarm on it to tell me exactly when it hit 125.  I got it at Wegmans for under $20.
