I once ground my whole harvest at once using my wife's food processor in the kitchen - big mistake. I now just use a box grater and only do enough to last a couple weeks. The roots will last a long time in the back of the fridge. After you have it grated, add vinegar until it is the consistency you want. Once grated, a chemical reaction occurs that gives it its heat.
