Pygmy Posted December 17, 2012 Share Posted December 17, 2012 I prefer to fry it , but I have had good luck pickling it also. Simmer the heart in water with salt, coarse black pepper and a bay leaf until done, about two hours.. Allow the heart to cool in it's broth.. Slice the heart crossways about 1/4" thick...Slice an onion or two about the same thicknes. It a glass, ceramic or plastic dish alternate layers of heart and onion, seasoning with salt and pepper. Mix 50/50 vinegar and water and a tablespoon of pickling spices. Pour over heart and onion to cover.. WNYBuckHunter Posted December 20, 2012 Share Posted December 20, 2012 Thats how I did it last year pygmy, but I added some minced garlic and threw some hard boiled eggs in the mix. Its delicious. That being said, my new favorite use for the heart is to make fajitas. My son loves it and we made 3 batches this year. The kid needs a shovel to get it eaten fast enough lol.
