Look for good pickled heart recipe

I prefer to fry it , but I have had good luck pickling it also.

Simmer the heart in water with salt, coarse black pepper and a bay leaf until done, about two hours..

Allow the heart to cool in it's broth..

Slice the heart crossways about 1/4" thick...Slice an onion or two about the same thicknes.

It a glass, ceramic or plastic dish alternate layers of heart and onion, seasoning with salt and pepper. Mix 50/50 vinegar and water and a tablespoon of pickling spices. Pour over heart and onion to cover..

Refrigerate for 3 or 4 days before eating..
