My first attempt (also using Mowin's recipe) came great until I thought they needed to be cooked a little more in the oven. The little more ended up being too long and they were slightly over cooked.

I think I made them too big as well...larger than a golf ball?

I really liked the smoke flavor

Lol, don't feel bad. I did the same thing the first time I made them, they were slightly over cooked and too big. It's a good thing I made them big because if they were smaller, they would have been dried out completely.

They're pretty good! Better than the first 2 batches I made a few weeks ago. I added some dried jalapeño to them as I know my breakfast sausage isn't too spicy.  Next time I'll try to add some high temp cheddar, as I think they could use more cheese.
