I can imagine you would make them like any other snack stick (smoked sausage), just make sure they get up to the right internal temp. I've done the bourbon jerky it was good but I really want to try pepper sticks. I've made them with venison and pork mixed, not sure if pork and turkey would go good together. Right after you get back from hunting. got working in the yard and let the smoker overheat, now I've got a batch of over done snack sticks. Yuk, I hate it when I ruin a whole batch, too dry.
