Hows every body's season going

Im lucky to live a part of the state where there are birds year round, This is my second season hunting geese and honestly dont know why i havent for the past 18 years, 

 

it's a lot of fun, this is my first year really hunting them, had a ton of fun, my wife loves it

 

I'm just south of you Tompkins county, but the birds are staying close to the lake, all my spots are a ways off,

 

good luck the rest of the season, I'm hoping to catch some snow geese this spring

Ok, I have to ask. What do you think of the taste of wild goose? I've heard all kinds of opinions, so I figured I would ask for just one more.

 

Another question ..... do you have to lease fields in order to hunt most areas? What's the current price for that kind of lease?

 

I have been watching some guys occasionally hunting geese as I go into town, and I have a bit of an interest.

I had goose chilli which I really enjoyed. I make jerky out of the goose breast but lots of my clients tell me recipes. One recipe I wanna try is they cook the breast in a crock pot and you can shred it with your fork, mix in bbq sauce and they make sliders. Another one was some olive oil,salt,pepper and cook it quickly on bbq at a high temp. They said it taste like steak. As far as lease's go 3 of mine are 3k each and my smaller one is $1500. Here on LI just about any field you see is leased

I make jerky or slice it thin and bread it then fry it in a little oil, CUbe it up and wrap it in bacon then throw it on the grill, The fields that im hunting are owned by One of my good friends So it doesnt cost any money to hunt, Im not a guide by any means  I just love watching my dog do her job and she is good at it,

It sounds like just roasting a goose like a turkey may not be something that people do. So is it fair to say that you have to dope them up with some kind of cover-up stuff in order to be able to eat them or is that putting it a little to strongly?

 

Regarding those lease prices, I have to say that no matter how good those geese may taste, those prices are way, way, out of my league. Their really is no way of hunting those critters if you don't get involved with some commercial hunting access, isn't that right? Or have some of you figured out a way to do this "on-the-cheap"?

I have had it every way known to man and am not a fan... I did enjoy a corned goose sandwich once and goose jerky... but to have it roasted... YUCK!

Doc as far as the leases go I have to as I'm a goose outfitter otherwise I probably wouldn't spend that much on those leases. Lately my clients been giving me there recipes for goose which I haven't tried yet but they sound good. One was taking some olive oil,salt and pepper cook on BBQ on high heat quickly on both sides and they said it tasted like steak. The other was cooking in a slow cooker with BBQ sauce, the meat breaks down like pulled pork and they serve them as sliders. I personally like to soak them in buttermilk overnight, pat them dry then I use a dry rub and make jerky out of them. It's perfect for the pit and my clients always love them
