what's your plan for cooking the ribs? I heard they can be a little harsh due to all the fat on them.......never tried it, but was told to par boil them and let the fat cook out and float to the top, let it cool and scoop that off and then cook them as you want

They have a strong taste similar to lamb I would say (not the exact taste of lamb but that kind of kick). I'm not a fan
