Dom
How long do you all marinade for jerky?I use a mixture of worcester soy sauce brown sugar and garlic and onion powder. My first 2 batches didn't give the taste I was looking for but only soaked for about 4 hours then dehydrated for 12 hours at 250 deg. Some will say add salt but the soy has more than enough. We like spicy at first and sweet then kicks in with brown sugar. I assume you're using meat and not ground ? Only thaw muscle meat a bit and then cut into desired thickness strips A lot easier than thawed completely I've generally marinated from 12-24 hours stirring in pan a few times
NYBowhunter
I use alot of varying spices and make a brine, then let the venison strips soak in the brine overnight in fridge. By the next day the meat swells and absorbs most of the liquid, then its off to the smoker for approx. 18 hours.
