Chevy
I made a less than ideal shot on a nice buck yesterday morning. Just missed the liver and went right through the center mid section. Knowing I made a gut shot I backed out as I could see the deer bedded up immediately. I went back at 5pm and found where he had moved to but he was still alive. I watch for a while and he was done by 6:30pm. My question is, how will the venison taste after a 10 hour ordeal like that? Won't the meat be tough and full of adrenaline? I plan to make 100% burger and hopefully harvest a doe for steaks.
NY Trophy Hunter
It should be absolutely fine.,,especially since you watched to deer expire. Issues arise when the deer has been dead for hours before you find the animal. Congrats! Pic?
Chevy
I haven't figured out how to post a picture yet. I will work on that. I always heard that if the deer is not disbatched quickly the meat is tough and/or gamey because of all the adrenaline. myth?
fasteddie
I was always told that deer that ran a great distance after being shot would have a gamey taste because of the Adrenaline .......
Chevy
This guy didn't run at all, he walked off and bedded up. I was just concerned because it took 10 hours before he passed.
Doewhacker
You never know, stress at time of kill is one factor but I had a simular thing last year and the deer was fine, not tough at all.
gundeck
Since he wasn't pushed (good job on your part) it should be fine. We always put some pork shoulder in with our burger. It adds some fat so it doesn't dry out too much when cooking.

First-light
Shot a deer at 7 in the morning and found him later in the afternoon, crows were even pecking at him. Was a big 3 yr old buck close to 190lbs. He tasted great! Don't worry about it.
