GM. I would bet that the term carcas can no longer be used once you take it off the bone. I agree that if you make it in one trip you are fine but if you split it up I think you are in for problems if you find a DEC officer in a bad mood.

I don't know, but that guy was pretty fast .... lol. The way that knife was flying around there, I would be careful about getting too close.....

NO. There is no need to gut a deer you are quartering to pack out. Packing them out is MUCH easier then dragging them especially when long distance or up hill is involved. My pack is a meat packer designed just for that job. It is an Eberlestock J107 dragonfly. There are places in the Adirondacks where dragging just is not practical.

This is how a lot of people down here in NC do it. They never gut their deer. What ever works.

Take it last. Take the flank second from last and that exposes the tenderloin.
