pit beef

 Any one ever have a pit beef sammy from the Baltimore area? They are awesume!  I've been researching how to make it and I am going to give it a try on my smoker, may have to do it with real beef but I will probably through in a venison roast as well. Curious as to how they will differ? Any one ever try this? any suggestions?

Ok i tried it using a couple of small top round roasts. They cooked up good but I feel they came out a little dry. I will make up some aujus and try it an a sandwich. The problem I am having is getting nice thin slices, I need to invest in a decent meat slicer. I can't get a real thin slice by hand or with an electric knife and it is a little chewy if sliced too thick. Taste is great though. Sorry no pics, I just don't thick of taking pics until it's too late.

To bad you aren't closer 2012_taco, I have a Bella slicer I will be selling at a yard sale in couple weeks. Used it once.

 

Maybe a few hours in the smoker and a few hours in a crock pot. Use the liquid from the crock as the au jus.

Well.....the much anticipated sample was hand delivered today.  My review follows:

 

 

FREAKING GREAT!  Very tasty and just a touch tough.  I've had MUCH tougher cuts of meat, really no big deal.........It'd be dynamite on a hard roll with a little Dijon mustard, lettuce & tomato.......and  beer. :)

it was all good til you got to tomato. Blech. But redemption with beer however.
