  6. I only grind everything partially frozen- with liver it doesn’t matter!!! Thankfully there’s a lot of wait time after the grinding before the eating which make the frightful sights and smells dissipate Sent from my iPhone using Tapatalk

  10. I have made venison liverwurst twice and each time the grinding step is brutal. Between the smell and the sight and the sound...it is enough to put you off the final product. I would like to make venison salami like the bartender in Coppola’s gave me three years ago now-we were there for Culinary Institute on someone’s suggestion from here we were at Coppola’s for pre and post dinner drinks. Co-worker’s husband is thinking of getting in the rub game and made up various rubs for pork, chickens, etc. I used his pork rub as a comparison to my normal Steve Reichlien BBQ University standby.   22. Can’t seem to get it up this morning(have fun with that one boys and girls!). The Char-Brooks vertical propane smoker is hovering at 200 with the vents on top wide open and set to high running for 40 minutes already. We shall see! Sent from my iPhone using Tapatalk
  23. Some seasons it seems like a sprint! Snappers(baby Bluefish) storm the back harbors and wreck little poppers or spearing. Great fun for kids of all ages! Often bigger blues and stripers hang under them. Unlike mature Blues, snapper are quite tasty. Sent from my iPhone using Tapatalk
