Running today was good, went out for awhile in the afternoon. -
I do it different. I make the sauce similar. However I use steak I can grill. I salt and pepper it then grill it medium rare. I then slice it on a bias, plate it then put sauce on top.

Cant beat steak pizzaiolo. I have made it with elk, moose, caribou and venison...any steak that you can leave rare it will work with. I really like taking skirt steaks off moose and using them

Went simple after Thursday Christmas eve dinner, which was about 10 courses Frenched herb crusted rack of Venison with roasted new potatoes and sting beans. We had a dry aged ham too...and lasagna

The only thing an eye of the round has in common with a tenderloin is the shape. They arent even close. Here is what I would do with mature buck if I was starting with an empty freezer. Its hanging, so let's start at the bottom Shoulders.. Take the shanks off into the grind grind lug Take both blades and trim them in whole blades steaks. Cross cut one shoulder into two pot roasts. The other shoulder grind it. Neck( chuck) bone this right out, trim it good, roll it and tie it. Then cut the ends for the grind lugs. Take the remaining center and split it into two pot roasts. If it's a big buck trim the flanks up, if it's small toss them in the grind lug. Take the ribs and bone them out in one section, trim up good and toss them in the grind lugs. Same with the brisket. Boin out the whole loin on both sides. Trim them well. Cut one side into three pieces for the grill. Cut the other into butterfly chops. Take out the inside loins, trim them and leave them whole. Split the Hinds. Take the shanks off and cross cut them for osso buco. The heels grind The sirloin tips, take the silver side off and slice cutlets. The rest make some nice stew. Sirloin, trim it and leave it whole as a steak Split the bottom from the eye. Square up the rump end of the bottoms and take 6 steaks off each, the rest is good for stew or grinds. Eye rounds, stew em Top round, square it, take three London broils off the front, a couple steaks and then stew out the short side. The only thing I would add, if you want an oven roast in addition to the pot roast....use a top round. That will give you a little of every thing.

Chistmas Eve, La Vigilia we have Festa dei sette pesci, though what we make will depend on what I like at the market... pasta con le sarde, insalata di mare, lobster tails, fried calamari, baked clams, shrimp fra diavolo, fried shrimp, tuna or swordfish..... we will see. Christmas day it will be lasagna, Prime Rib, Zuppa Toscana, rack of Venison and some side dishes. Deserts will be subdued. My sister would make make a whole table of Italian desserts enough for Christmas eve and Christmas day, and for everyone to take home too, this will be our second Christmas since she passed. We will have a desert table but it won't be the same.

Maybe it was the 30 inches of snow and being home all day tending the fire? Maybe it was the three neat bourbon'? Maybe it was that Rokslide thread about moose bottom rounds sucking? Anyway it had me thinking. Do moose bottom rounds really suck so bad they they should be put in a grind lug? Being so close to Newfoundland....wait is 20 hours of driving and an over night ferry close? Probably not but that's what I tell my wife when go bow hunt there about every three years or so. Luckily that often puts a moose in the freezer. Back to the bottom round. It was staring at me from the freezer, pleading that it doesn't really suck....so I hacked it into cutlets. I then pounded them a bit and turned them into moose piccata, well sorta of... That is I lightly breaded and then fried them, after which I then placed them in a hot glass pan and sat them in the oven. The still hot frying pan was deglazed with a bit of white wine, which I also drank...a pat of butter, a bit it of garlic, some fresh parsley, chopped capers and the juice of a lemon. Please dont grind your bottom rounds.... Merry Christmas

Looking forward to update tatacam if it ever gets put out... Right now I have as far as cell cams i have a muddy( spy point rebrand ) Browning Proscout and three coverts. The coverts i have on my Kansas ground are going on three years old, one is starting to have some night time issues but in honestly they been pretty good all around. The Browing except for not working right out of the box and having a replacement sent has been soild and the muddy is Ok so far. Going to be picking up a couple more browning and also a exodus this year as I transition all my cams over to cellular -

Two years into Trumps administration I knew that I got duped . He had majorities in the house and senate, and the only thing that got a accomplished was corporate tax cuts for the donor class, with some scraps tossed on the floor the rest of America. Instead of Trump tossing gas on the two party duopoly he went all in as partisan hack. I was duped I admit it. However that was no excuse to double down on the dumpster fire Trump has turned this presidency into. -
