It is your call and that is why I mentioned what the official stance is in my post. The same warnings are for pork. Shushi is another problem for some and no more than a few meals a month of NY fish.....

I got one this past year and my experience with skinning it was not the most pleasant thing I've done. They are some smelly, greasy sons a B's. I let someone else butcher it and gave most of the meat to him. Kept some for stew which turned out pretty good. I was told to clean the meat of every little bit of fat you can find because that's where the gamey taste comes from. I won't kill another bear unless I have some one who will take a good deal of the meat. I'm the only one who will eat it in my family and I won't waste it just to say I killed another one.

I just can't bring myself to eat a carnivore. I prefer herbivores!

And yes I know that bear are omnivores, but to me they still hunt like predators when they need too.

I couldn't believe how tough they are either. I had to sharpen my knife every 5 minutes

I am always amazed by bears.  They can survive on anything, from berries, to game animals, to deer guts, to garbage, to anything what so ever.  That has always fascinated me.  I don't think there is another creature that can very their diet so much.

I've eaten bear meat a few times........won't lose any sleep over it if I never eat it again .

make sure there's a season there. Just because there's bear doesn't make it legal. And have a plan to get it out. You cant just drag a deer out of the woods like a deer. I'd hate to have you shoot one only to find you can't get it out.

 

i've had bear that was ok, and bear that was no good at all. I certainly would not consider it "great eating". but that's my personal opinion.

I had it once as a burger and it was pretty good. I passed a bear at 10 yards yesterday morning because I didn't have the time to drag it out (half mile) or precess it right then.
